Blind Pig opened in June of 2022 after we had well outgrown our commissary space in Newberg. After three long years of that food truck life (you know the one), and a whole lot of events in the Valley, we stumbled upon the opportunity to put some roots down (and parking break) here in the “Great Little Town” of Carlton, Oregon. What makes us special? Our people, our flavors, our cocktails, and most of all - the experience we want to create for you. One part renegade, two parts humble, three parts hush hush - come check us out and you’ll see what all the fuss is about.

Nicholas Bell, Owner, Chef

Nick Bell has worked in the food and service industry for 12 years and has worked in a variety of restaurants. Nick attended Le Cordon Blue in 2012 and later finished his culinary degree at Oregon Coast Culinary Institute. While in school, he learned classic French cooking techniques and cuisine.

In 2014, Nick helped start a breakfast, bread, and coffee company called Silver Stallion Coffee and Bread in Gallup New Mexico. Nick later ventured back to the Pacific NW where he worked under chef Jason French at Ned Ludd until accepting a position as Sous Chef at Ruddick/Wood in 2017. Nick has a strong sense of flavors and is passionate about serving quality food without the fuss of the fine dining atmosphere. Nick’s recipes are the foundation of our food truck’s success and have allowed us to open Blind Pig in the summer of 2022 were we are now hard at work!

Cody Drew, Owner, Chef

Cody Drew grew up in McMinnville, right here in the heart of the Valley. His upbringing focused on respecting the life cycle of the foods we consume by learning early to value the process of “making things from scratch.” Cody began at Ruddick/Wood in 2013, the same place where he later met Nicholas and the rest was history. Cody’s candor and respect for the craftsmanship of the food industry makes him a welcome partner. He brings knowledge of whole-beast butchery, life, humor, creativity, and years of culinary experience to the team.

Noelle Amaya bell, owner, Events manager & “other duties as prescribed”

Noelle and Nick met at Barley & Vine, where she managed the small Newberg tavern in 2017. They soon realized they shared a love for food, wine, customer service, and hard work. Noelle’s industry experience and her love for details is why she is our customer service and event guru.

Wesley Jones, Owner

Wesley is also the owner of Tour Cascadia LLC, a wine and adventure tourism company. Wesley focuses most of his time and attention to growing his business, but is a valued and well respected member of the Renegade family.
